I’ve made this drink countless times, and it never fails to impress. Here’s my take on the Jet Pilot, with a few tips I’ve picked up along the way.

Ingredients

Servings: 1 cocktail
Prep Time: 5 minutes

You’ll need:

  • 1 oz (30ml) dark rum
  • 0.5 oz (15ml) overproof rum (for an extra kick)
  • 0.5 oz (15ml) falernum (a spiced, slightly sweet Caribbean syrup)
  • 0.75 oz (22ml) fresh lime juice
  • 0.75 oz (22ml) fresh grapefruit juice
  • 0.5 oz (15ml) cinnamon syrup (adds warmth and depth)
  • 1 dash Herbsaint or Pernod (a touch of anise flavor)
  • 1 dash Angostura bitters
  • Crushed ice

For garnish:

  • Lime shell (optional, for a flaming garnish)
  • Cinnamon stick (optional, for extra aroma)

How to Make a Jet Pilot

  1. Fill a cocktail shaker with ice.
  2. Add the dark rum, overproof rum, falernum, lime juice, grapefruit juice, cinnamon syrup, Herbsaint (or Pernod), and Angostura bitters.
  3. Shake well until the shaker feels cold—about 15 seconds.
  4. Fill a Tiki mug or double old-fashioned glass with crushed ice.
  5. Strain the cocktail over the ice.
  6. For a dramatic touch, float 0.5 oz (15ml) overproof rum on top by gently pouring it over the back of a spoon.
  7. Garnish with a lime shell filled with a small amount of overproof rum, then carefully light it for a classic flaming presentation. Or, skip the flame and just add a cinnamon stick for a warm aroma.

Tips for the Best Jet Pilot

  • Use fresh citrus juice. Bottled juice won’t have the same bright, fresh flavor.
  • Don’t skimp on the ice. This cocktail should be served ice-cold, and crushed ice helps dilute and mellow the strong rum flavors.
  • Adjust the sweetness. If you prefer a less sweet drink, reduce the cinnamon syrup slightly or add an extra splash of lime juice.
  • Flaming garnish safety. If lighting the lime shell, make sure to do it in a safe area, away from anything flammable. Extinguish before drinking!

I’ve made this drink for summer parties, and trust me—once you get the balance right, it’s a real showstopper.

Variations & Substitutions

Want to switch things up? Try these variations:

  • Milder version: Swap the overproof rum for regular dark rum to make it a little less potent.
  • Sweeter twist: Use honey syrup instead of cinnamon syrup for a different depth of sweetness.
  • Spicier take: Add an extra dash of bitters or a tiny pinch of cayenne for heat.

Non-Alcoholic Version:
Skip the rums and replace them with a mix of pineapple juice and ginger beer for a refreshing, booze-free alternative.

What to Serve with a Jet Pilot

This cocktail pairs beautifully with bold, tropical flavors. Here are some great food pairings:

  • Spicy Thai or Szechuan dishes – The cocktail’s sweetness balances the heat.
  • Grilled meats with fruit glazes – Think pineapple-glazed pork or teriyaki chicken.
  • Fresh tropical fruits – Mango, pineapple, or papaya make a refreshing side.

The Jet Pilot is one of those cocktails that takes you on a journey—bold, aromatic, and packed with layers of flavor. Whether you’re making it for a party or just treating yourself, enjoy the ride!
